The rich and variable cuisine is the obvious trump of Almaty city. In contrast to city's «green lungs» or cleanliness on the streets this part of attractiveness of the southern capital of Kazakhstan doesn't fade. The well-to-do gourmet could satisfy his appetite in the system of public food with full kit of his stomach and liver.

In this sense the unique megalopolis of Kazakhstan amazes with cosmopolitanism and refinement of it's cuisine. Very often the visitors from abroad arrived here on business trip, forget about the main applicability of the business lunch or dinner, flying into a rage of eating process.

List of the main Almaty cuisines is very long. It starts with Kazakh, Russian, and so-called «European» cuisines. The «European» cuisine represents the collection of food and dishes traditionally concerned to French (salads), German (sausages), Italian (pizza) and other cuisines of European countries.

To the South from Almaty there is the Middle Asia with its pilaf (plov) and other specific victuals. To the East there is the Eastern Turkistan with Uigur, Dungan cuisines. Further to the East there are China and Korea with the Chinese and Korean cuisines. The Shashlik (shish kebab) considers as attribute of the Caucasians cuisine, but in Almaty it is perceived as internally urban food.

From those cuisines have brought here by winds of globalization are Japanese, Indian, Mexican, Argentina (meat fried on the grille) and Cuban. Turkish food is the new one for Almaty too, however, wide circulation of doner kebab more and more strongly includes them in the habitual menu of Almaty citizens.

Names of cafe, restaurants and night clubs are as from the reference book on geography: «Salvador», «Venice», «Borodino», «Cuba», «Versailles», «Peking», «Dublin» and many others.

As the certain cuisine has the corresponding (conformable) drinks, here again Almaty can be praised of assortment: from Ukrainian «Qourilka» and Scotch (Scottish) Whisky to Georgian Vine and French Cognac (Brandy). Thus many of elements from different cuisines could be easily combined. For example, Dungan salty beans and Czech bear. Speaking about the fish dishes (food) nobody could say, that the overwhelming part of the country is situated in the middle of the continent, and there is no outlet to the (high) sea.

The sphere of restaurant business is one of few in Kazakhstan, where pernicious influence of monopolization is brought to a minimum because of its difficulty to for the opponents of economic freedom. In this regard the megalopolis opens more opportunities and additional impulses to a competition. In the spring, when the «letniki» (out of doors cafe) begin functioning, a variety of the offer grows even more. The large share of sheep from Kyrgyzstan leaves on export to restaurants of southern capital of Kazakhstan.

Western researchers of the republic observe that in Almaty in comparison with the European large cities there are not enough public catering establishments for middle class, there are many of them for the rich and the poor. The megalopolis has the available restaurants, cafe and dining-rooms practically on any income, also the exit service is in the process of developing in Almaty. You see if the lobsters and tandyr samsa are sold, there are the consumers both for one and for another. It's right that the public catering (food) in Almaty is rather specific. Practically on one patch of a street it's possible to have a cup of tea at a price of 2000 tenge and to have a hearty meal at the same price in the café beside. Nobody can distinctly explain this phenomena as well as why the similar establishments coexist from year to year.

Though scandals because of use of poor-quality products in the elite restaurants periodically flash, in whole it's harmless to have a food in Almaty. The generically (genetically) modified products are very seldom on the local market, so the bull-calves feed with grass at the mountains obviously predominate over the animals took the medicines for the fast growth.

Deterioration of the economic situation and the problems accompanying this inevitably will lead to further growth of a competition in sphere of public catering. Hope that the given circumstance will polish a side of diamond which is included in a set of indisputable advantages of Almaty city. So, business trips in southern capital will even more strongly be fixed with association about tasty, delicious and various food.
